Towards a logistic organization for organic-local product supply Case of study: School canteen distribution system

Résumé

The aim of the paper is to analyze, via a scenario assessment, which are the needs and requirements to carry out an evaluation of the logistics organization for a local and organic supply logistics schemas. In other words, we aim to assess the potential of increasing local production in institutional catering logistics systems. First, the background of the research is presented. Second, the methodology to build the scenarios is proposed. Second, the modelling of transport schemes is proposed, as well as the assignment of local producers to logistics platforms and restaurants. Third, results are shown and discussed. Those results show that local producers' introduction can result into logistics gains only if an efficient logistics organization is related to them to deliver their products. Finally, implications for both researchers and practitioners are addressed.
